Every time I work with pastry, I learn something new. Some of these lessons are metaphors for good living.
-Pastry needs down-time. In between pulling all the ingredients together and rolling them out, the dough needs me-time in the fridge to regroup. If pastry can’t be ready for the main event without doing some self care, how the hell can you expect yourself to perform your best if you aren’t also taking your time to chill?
